It’s Sassy…and Sexy!

Bolero, the newly renovated restaurant at the Avalon Hotel, is a rapidly rising star on the local culinary scene. Just one meal at this sassy and sexy restaurant will show you why. Owner Ramesh Diora is behind this amazing transformation. Being inside feels like a visit to Andalusia, the province in southern Spain where Flamenco was born. Bolero’s flare is irresistible! The menu consists of dozens of delectable tapas ‘small plates’ each one more intriguing than the next – as well as other authentic Spanish dishes. Make a meal of Bolero’s tapas with selections like the Charcuterie Plate and Seared Yellow-Fin Tuna on the cold side; and Albondigas (homemade Spanish meatballs) and Patata’s Bravas (Yukon Gold potatoes with spicy charred tomato aioli) on the hot. Save your appetite for the show-stopping paellas. There are different variations. A favorite is the Shellfish Paella – a stew of shrimp, clams, mussels, calamari with peppers & onions. Some entrées are more substantial than others – like the Bourbon BBQ Ribs served in Bolero – or the amazing Veal Osso Bucco and 16 oz. Delmonico Ribeye served in Cheyenne Cattle Company Chophouse adjacent to Bolero. Executive Chef Jodi Porter prepares some of the finest steaks you’ll find in the region!
